More Onions, More Tears

Ever slice some onions with the result that your eyes start watering? You can have even more of that if you know how.

When you slice onions, it releases a chemical called propanethial-S-oxide that irritates your eyes. The tears that are produced form a protective barrier against the chemical in an attempt to keep it from reaching your delicate eyes.

If you wipe your eyes, this protective barrier is removed, and your eyes will produced even more tears to compensate.

This chemical is released when the knife rips through the onion — so be sure not to use a sharp knife, which will cut through cleanly without ripping those cell walls open.

So there you have it. Use a dull knife, keep wiping your eyes, and the tears will just keep on flowing.
